Kale Smoothie

I know I'm not the only one out there that values their sleep... I value it so much, in fact, that I normally choose to snooze an extra 5-10 minutes before rolling out of bed and heading in to work at six in the morning. This almost always means I don't give myself enough time to grab or fix anything for breakfast, which then results in me spending unnecessary amounts of money (on the daily!) at my new favorite coffee shop next door.

So I've decided to make a change. No, I'm not quitting West End cold turkey, but I've decided to limit myself to one coffee shop trip per week. And because I'm all about being as efficient with my time as possible (read: get as much shut eye as possible), I've decided to look into quick, healthy, and of course yummy at-home breakfast choices. 

Breakfast or not, anytime is a great time to enjoy a smoothie. Especially when it has the Queen of Greens in it -- KALE!! Did you know that kale is one of the most nutritious vegetables for you? In just one cup, these leafy greens provide you with over 100% of the recommended daily value of vitamins A and C and almost 700% of vitamin K... Sure these vitamins may seem like just alphabet letters to you, but physiologically they act as powerful antioxidants in your body, lowering your risk of developing cancer! So grab your greens and head to the blender, it's time for a smoothie :)

Ingredients for 1:

-1/2 cup almond milk

-1/2 cup pineapple juice (for a total of 1 cup liquid)

-2 cups kale; washed, stemmed, chopped

-1 1/2 cups frozen fruit (I usually choose strawberries and mango/peaches)

-1 ripe banana

Blend on low first, then gradually increase speed until consistency is smooth. Enjoy!!

Since I've been upping my water consumption, I've noticed a significant difference in my skin. I'm already experiencing fewer breakouts and I also use this little Lush warrior, Grease Lightning, (pictured above) to tackle the few spots that still show up....
